Baked fish fingers


On a late Sunday afternoon when everyone was a bit lazy over a fun filled weekend, I decided to do some thing new. I had some Catfish(Bassa) lying in the freezer, so I finalized on making some light snack of Fish Fingers. But then I was really not in the mood for going the traditional way of doing it that is DEEP FRY. Its not that I don’t like fried stuff but then now a days everyone is health conscious, at the same time even I am also working on melting the extra fats which I stored over the years saying its Moms love. (LOL).
So what can be done????????????????? Then it just clicked me lets do these fish fingers oven baked. Baking has its own advantages and one of them is that it’s not fried so no junk category!!!!!!!!!!!!!!!!!!
Along with this I planned to give a very refreshing version of tartar dip- wasabi tartar!
So now let’s get down to our fish fingers, for them we will require …….


ingredients
Quantity
Basa fillet
400gms cut into 1” long strips
Eggs
2 nos.
Mayonnaise
100 gms
Plain flour
250gms
Sweet paprika
10 gms
Fresh tarragon
5 gms
Lemon juice
20 ml
Olive oil
10 ml
Panko crumbs
200 gms
Parmesan
100 gms
Salt & pepper
To taste


Method
  • Very first step is to marinate the fish with lemon juice, salt, pepper, chopped tarragon & olive oil. Place fish back into the fridge so it won’t spoil.
  • Now take 3 bowls, I prefer glass ones so I can see all my ingredients.
  •  In 1st bowl put together flour (sifted) & paprika with just a pinch of salt. Mix well.
  • In 2nd bowl put eggs & mayonnaise with just enough water to get batter consistency.
  • In 3rd bowl mix together panko crumbs & parmesan cheese.
  • Now preheat the oven at 175C for 15 mins. Line baking trays with baking sheets lightly grease them with olive oil.
  • Now put fish 1st in flour mix then put in the eggs mix scraping out excess liquid & then coat with panko cheese mix.
  • Do the same with rest of the fish & arrange them on the baking sheet, leave small gaps in between.
  • Bake the fish in preheated oven for 3 mins on each side, turning once.
  • Take out the fish & it’s done, Viola!!!!

For wasabi tartar dip we will require

Ingredients
Quantity
Mayonnaise
150 gms
Capers
30 gms
Cocktail onions
30 gms
Gherkins
30 gms
Parsley
10gms
Wasabi ( paste form)
1 tube


Method
  • Mix all the ingredients in a mi9xing bowl and keep chilled till the time u want to serve.
  • Serve some French fries along with these whole some fingers.
