How quintessential-Red Wine

     "The taste of cheese and wine depends upon the microorganisms infecting them". They say an apple a day keeps a doctor away; after knowing these facts about red wine I think a glass of red wine can also do same things to you. Well to begin with wines are the most underrated alcoholic beverage in India whereas red wine with Indian food would be the most desirable and exciting combination. The wine, medium to heavy body, bold tannins, intense bouquet and the red color. Oh so good !!!! They are excellent with the bold spices and intense flavors of Indian food. The Italians prefer to drink Italian wine with  their food. The reason being that a wine from a particular terroir is excellent with the relative cuisine.
                 
            India itself has several local wine brands which are nice and enjoyable. I know it can replicate or replace the french. But this wines go really good with our cuisine which is absolutely versatile. If you haven't tried red wine with Indian food I shall provide you with an array of pairing which I would like you guys to try.  Indian food can be divided in the categories of lamb, fish or chicken flavored with heavy spices cooked in the clay oven called tandoori. Everything which cooks in the tandoor is called Tandoori and is accompanied with a savorful smoked flavor. A moderately oaked Shiraz or Gewurztraminer would be a great pairing. Even  a Pinot noir with light nuances would be an excellent choice. With slightly subtle spices or creamy marination of meat and seafood or such curries the Merlot or Cabernet  Shiraz  will be a great adventure. However if you would be sticking to something vegetarian then a light rose would be just right. Spicy and flavorful vegetable preparations can of course be accompanied with Cabernet Shiraz. This is just a broad preface however everyone has their own taste and the adventures with it. Why not ??? Everyone has different custom made taste buds. 

Let me present you with some facts about red wine which make me promote them. Antioxidants are enzymes which prevent oxidation. Whenever any cell consumes oxygen which is almost every next second it is subjected to the process of oxidation which is known as aging in simple terms. This results in the wearing off of the cell. Antioxidants slow down this process of wearing off by repairing the cell. Red wines are full of the antioxidants in the form of Resveratol and Flavanoids. They also stop the growth of the new cells into cancer cells. To an extent they prevent some forms of cancer. These antioxidants have a property of fighting and reducing the LDL which is low density lipoprotein. This aids into the process of blood thinning. Thus it doesn't allow any plaque to settle down in the arteries. Thus it prevents probability of heart strokes or arteriosclerosis. It also strengthens the immune system.

Red wine is used extensively in cooking. My point is there’s so much good that a red wine has and it is an excellent option for pairing with Indian food. Red wines should not be just about anniversaries or dates but should be part of our weekly dine outs also. However, moderate drinking is what I support. Excess of anything is bad and alcohol has proven disadvantages over health, social and personal life. So, Drink but responsibly.
