This Tuesday we had a private party at my restaurant. As usual, the guest called the chef to discuss the menu. We had a detailed conversation and all the courses were suggested, tried and finalized for the menu. Everything was going fine but this was no ordinary day. On the day of event, this guest decides to put me in a mystery box challenge.

While coming to the restaurant he brought 10 kgs of fresh prawns. Dude calls me and tells me to do the best I can with it. It happens very rare in this profession that people request you rather than ordering. But when that happens, none of us can refuse. Its as quick as dollop of beurre blanc melting on a hot salmon steak.
Arse on fire, one hour left for service what am I going to do .This is when I thought of this simple and easy recipe that can be done in no amount of time.

- Make the batter with corn floor, refined floor, salt and baking powder
- Dip the prawns in batter and deep fry them till golden brown
- In a separate pan sauté garlic ginger and crushed pepper. Add soy sauce, pepper seasoning and toss it nicely
- Quickly add prawns toss it in pan and serve piping hot garnished with shallots.
