Teriyaki Chicken Skewers


        This weekend was full of fun, energy and a small gathering of old folks. Although we were planning this for quite a long time; still we were not able to decide on what theme to go with. Then I casually asked Nilesh what to do and here comes the very typical Nilesh “Let’s do an Oriental theme.” I don’t hate oriental food, as with me I actually don’t hate anything that is related to food. But when it comes to Oriental or Japanese food I am not that fond of it as well. This food is really very subtle on flavors although textures and colors are very vibrant. After very much head storming and loosing the battle of words with both Nilesh & Asmita we finalized on the Oriental theme.
My part was to take care of the mains and since all of us are hardcore Non Vegetarian I was saved from making the Vegetarian mains. So now here goes my version of Teriyaki chicken skewers on the bed of Egg Stir fried rice.


Ingredients

Chicken leg (boneless)
500 gms (Cubes)
Light soy sauce
100 ml
Sake
60 ml
Honey
30 ml
Ginger (chopped )
1 ½  inch piece
Garlic ( chopped)
8-10 cloves
Lemon grass (chopped)
1 stalk
Orange juice
60 ml
Water
100 ml
Olive oil
30 ml
Satay sticks
6 no.
Salt & pepper
To taste

Method
  • First cut chicken into 1 inch cubes & wash them properly.
  • Now in glass bowl mix together soy sauce, sake, honey, orange juice, ginger, garlic, lemon grass, water & olive oil.
  • Mix this marinade very thoroughly, add the seasoning.
  • Put chicken in this marinade, cover with cling wrap & put in fridge for overnight..
  • Next day take it out of the fridge at least before 35-40 mins prior to grilling so that meat comes to room temperature.
  • Now on each satay stick arrange three cubes and keep them in marinade only.
  • Grill these skewers for like 1 min per side turning them so they won’t burn and putting little little marinade over them so that they won’t get dry.
  • Now if you have the marinade left which I promise you would take that in a thick bottom pan and let it reduce till it thickens.
  • Pour this over the skewers as sauce and enjoy your lovely Teriyalki Style skewers.
Now for the Egg Stir fried rice we will require,


Ingredients

Steamed rice
500 gms (cooked)
Light soy sauce
30 ml
Corn kernels
50 gms ( boiled)
French beans (chopped)
50 gms (blanched)
Carrot (chopped)
1 no
Ginger (chopped )
1 ½  inch piece
Garlic ( chopped)
8-10 cloves
Green chilies
3-4 no.(deseeded)
Scallions (chopped)
2-3 stalks`
Vegetable oil
60 ml
Sesame oil
20 ml
Eggs (beaten)
4 nos.
Salt & white pepper
To taste

Method

  • In a heavy bottom skillet or in a Chinese wok heat the vegetable oil till it smokes a bit.
  • Add ginger, garlic & green chilies, give a quick stir; add soy sauce then stir again.
  • Now add the beaten eggs and keeping the medium flame stir vigorously so that egg breaks down into small pieces.
  • Add cooked rice stirring continuously then add the corn, beans & carrot and give a last stir adding seasoning.
  • Plate the rice and garnish it with the chopped scallions.
